Veggie Sushi

Sushi

Everyone knows that I love my vegetables and I like to incorporate them into my recipes. So one day, I decided to make some veggie sushi. Now let me remind you that this was my first time making any kind of sushi. So the thought was a little imitating. But what I love about sushi is that you can put anything inside. Its one of those dishes that you can't mess up...That's a plus for me!! So guys, I think I did a pretty good job for my first time. I also had a little help from Chef Lin. Great sushi demonstration!! Thanks for the inspiration, Danielle!!!

My Veggie Sushi Ingredients: I also modified the vinegar solution that is place over the rice. Instead of rice vinegar and sugar, I used apple cider vinegar and honey.

Ingredients:
1 cucumber
1 red bell pepper
1 avocado
2 carrots
2c. sushi rice, Calrose rice
1/4c. apple cider vinegar
3tbs. honey
1 tsp. sea salt
Wooden spoon
Sharp knife
Soy sauce
Wasabi
Bowl of water (for handling the rice)

Sushi Rice Recipe:
Combine the apple cider vinegar, honey, and salt in a small bowl and whisk. Transfer cooked rice to a flat surface...I used a baking sheet. Using a wooden spatular spread the rice and sprinkle vinegar mixture over rice and fold it into rice. Remember not to over do it with the mixture. Because you don't want soggy rice. And don't stir the mixture into the rice because it will break the grains. Let it cool...You have your sushi rice!!! Now its time to make sushi...Have Fun!!!
