Creamy Broccoli Slaw

Creamy Broccoli Slaw...hmm....a little skeptical about how this was going to turn out. But once again, mom wanted to try this recipe. I did not know what to expect from this dish but mom thought it looked really good when Ellie Krieger made it on her show. So off we went to the grocery store to get the ingredients.

1 cup of lowfat Greek yogurt
1/3 cup raw sunflower seeds
3/4 teaspoon salt, divided
1/4 cup lowfat buttermilk
3 tablespoon lemon juice, its like half the lemon
2 tablespoon spicy brown mustard
1/4 teaspoon black pepper
1 1/4 pounds broccoli stalks
1 or 2 medium carrots
2 tablespoon canola mayonnaise

The slaw was ok...it lacked the sweetness you would get from regular coleslaw. I did enjoy the toasted sunflower seeds. The creamy sauce was ok too. It had a tangy flavor to it because of the spicy mustard and the lemon juice. The coleslaw needed something sweet like raisins, apples, or honey to give it that extra kick. Dad did not enjoy it....sorry dad!! Overall, it was a ok coleslaw and a healthy alternative that would taste good with some BBQ ribs or burger on a Friday night.

Directions:
Place sunflower seeds in a nonstick pan over medium heat and toast seeds until aromatic. Cool and set aside. Combine yogurt, buttermilk, lemon juice, mayonnaise, mustard, 1/2 teaspoon salt and pepper. Whisk to incorporate the flavors.

Peel tough outer layer of broccoli stalks and trim off 1/4 inch from bottom and shred stalks in food processor, then shred carrots. Combine shredded broccoli and carrots with dressing and toss to combine. Add sunflower seeds.
