Homemade Tomato Basil Soup

Fresh tomato and basil are the two key ingredients to this summertime tomato soup recipe. Almond milk is added instead of cream to keep it healthy. Great way to use those tomatoes and basil, straight out of the garden.
Homemade Tomato Basil Soup:

1-28-oz can of whole tomatoes
2 tablespoon olive oil
1/4 cup yellow onion, diced
4 cloves garlic
2 tsp. Italian seasoning
2 cups vegetable stock
1/2 cup almond milk
1 bay leaf
1 tsp. cayenne pepper
1 tbsp. honey
Chopped basil
Salt to taste
Saute onions and garlic in the olive oil until tender and translucent. In a bowl smash the whole tomatoes with your hands. Add tomatoes and broth into the pot. Add the seasoning, milk, bay leaf, cayenne, salt and honey. Cook over medium heat for 15 to 20 minutes. Remove from heat and allow to cool before placing into a blender. Pure until smooth. Return to pot and adjust seasoning if necessary. Add the chopped basil.
