Lo Mein Noodles with Green Beans


Lo Mein noodles are similar to spaghetti, so if you really want to cook this right now just use a box of your favorite spaghetti and start cooking. It's so delicious... I could not stop eating this, YUM!

Ingredients:
Spaghetti
Green Beans

Sauce:
3/4 cup Vegetable Broth
1 tablespoon fish sauce
1 tablespoon sesame oil
1 tablespoon balsamic vinegar
1/2 teaspoon rice vinegar
4 tablespoon soy sauce
1 garlic, minced
1 tablespoon ginger, minced
1 tablespoon honey
1 tablespoon tapioca powder
3 tablespoon water
Salt and black pepper to taste

Bring a large pot of water and salt to boil. Add the noodles to the salty boiling water and cook according to package directions. Drain and set aside. 

In another bowl, add the vegetable broth, fish sauce, balsamic vinegar, soy sauce, and honey. Whisk mixture to combine and set aside. 

Place a large pot of water on the stove to boil. Pick off the green bean stems. Rinse the beans in cold water. When the water is finished boiling, add a large handful of green beans and let them boil for 3 minutes. Remove the beans and immediately soak them in a bowl of ice water (it stops the cooking process and preserves the bright green color).  Remove from ice water and season with salt and pepper and set aside. 

Place the tapioca powder and 3 tablespoons of water in a bowl, stir well to combine and set aside. 

Heat up a large skillet or a wok, add the sesame oil over high heat. Add the garlic and ginger, stirring constantly. Add the sauce and cook for 2-3 minutes. Add in the tapioca mixture and cook until thicken. Add the noodles and green beans and toss well. Serve immediately and garnish with some chili pepper flakes.
