Grilled Tuna Steak with Pinto Beans and Spinach Radicchio Salad
Another quick meal I love to cook. A very healthy and hearty meal to eat on a Friday night. I made this tuna steak meal in no time. My husband grilled the tuna and I made the beans and salad. And it only took us 30 mins to make this delicious and flavorful entree. Very Good Eating!!!
Ingredients:
2 Tuna steaks
Bag of Spinach
Radicchio Lettuce
1 Lemon
Cherry Tomatoes
2 Cans Pinto Beans
Red Bell Pepper, minced
Red Onion, minced
2 Cloves Garlic, minced
Salt and Pepper to Taste
Marinating your tuna would be perfect for the grill. You could find any recipe for marinating tuna or make one of your own...I just season my tuna with salt and black pepper and olive oil and throw them on the grill. Grill for 4 minutes on a medium heat on each side for well done. If tuna is thicker you may want to grill a little longer.
Pinto Beans in a Can:
Sauté garlic, red peppers, red onion until soft and add the pinto beans. Cook for 5 minutes on a low heat until beans absorb the flavor from the seasonings. Salt to taste.
Salad:
A bag of Spinach and Radicchio lettuce. Add your cherry tomatoes, salt, black pepper, olive oil and drizzle with lemon juice. The Lemon adds a very tangy flavor to the radicchio and spinach.
