Rice on Chili

All time favorite!! If you want something quick and hearty this is the meal to cook. It's so easy to make and you can't mess it up. You can pretty much throw whatever you want in the pot. My dad throws veggies, ground beef, beans, wieners...yes hot dog wieners and of course rice. Delicious!! You can basically make it your own which I did in this rice on chili recipe.

Ingredients:
3 tsp. olive oil
1 small red onion, diced
2 cloves garlic, minced
1 green bell pepper
1 orange bell pepper
1 jalapeno pepper, add more for extra spice
2 cans pento beans, drained
1 can stewed tomatoes
1 can tomato sauce
1 cup water
1 tbs cayenne pepper
1-2 tbs. chili powder
1 tbs. ground cumin
1 1/2 tsp. dried oregano
1 tsp. of honey
Salt and black pepper to taste
Any cheese
1 cup cooked Brown Rice

Heat oil in large sauce pan over medium heat. Saute garlic and onion until soft. Add green and orange bell pepper and jalapeno. Cook until vegetables are tender. Stir in tomatoes, sauce, water and beans. Season with cumin, oregano, chili powder, honey, cayenne, salt and black pepper. Cover and simmer for 30 minutes. Serve with rice on top. Don't forget to sprinkle cheese.
