Seared Salmon with Poached Egg and Asparagus


My husband has started his Doug Kaufmann Phase 1 diet. So Saturday morning he could not make his famous buckwheat and yogurt pancakes. Searching through my recipe box I came across a simple morning breakfast meal from The Farmstead Egg Cookbook by Terry Golson. It was a perfect breakfast dish for him and myself. And it only took me 35 minutes to make it. I guess I will be making more Phase I diet meals.

The sauce went so well with the salmon

Dressing: Is not used for the Initial Phase Diet I & II
1 tsp. of honey, add more for a sweeter taste
1 tbsp. of ground mustard
2 tbsp. lemon juice
2 tbsp. of mayonnaise (i used vegenaise)
1/4 tsp. sea salt
1/8 tsp. ground pepper
1/3 cup of olive oil

For the Assembled Dish:
Seared Salmon
Asparagus spears, stir-fry
Poached egg
Salt and Black pepper to taste

Whisk the dressing ingredients together. Stir-fry the asparagus with olive oil and salt to taste. Arrange the seared salmon and stir-fry asparagus on a plate. Top with poached egg and drizzle the dressing over the egg and asparagus. Ready to Eat!!!
