Strawberry Apple Crumble
My husband and I was craving for something sweet and healthy Friday evening. My husband is still on his Phase 2 diet so I had to get very creative with this dessert. All I had in my refrigerator was strawberries and granny smith apples. So this was really a challenge for me. What can I make that would satisfy our sweet tooth without messing up his diet? That was the big challenge...What can I make? I have apples, strawberries, and walnuts...hmmm...how about a Strawberry Apple Crumble. I made this dessert/snack in no time it was easy as 1, 2 ,3, 4 & Done!!!
Ingredients:
Strawberries, sliced
4 Granny Smith Apples, peeled, cored, sliced
3/4 cup honey
1/2 cup crushed walnuts
1 tsp. cinnamon
1 cup whole wheat flour
5 tbs. chilled butter
1/2 cup oatmeal
Pinch of salt
Suggestion: heavy whipping cream or vanilla ice cream...Yum
Preheat oven to 35o degrees. Combine strawberries, apples, walnuts, cinnamon and honey in a bowl. Give it a good toss. Place strawberry and apple mixture in a pan over medium heat stirring occasionally until slightly soft. I took out the juice made from the apples and strawberries. I added flour to the juice mixture over medium heat just to thicken it. Sift the flour into a bowl, add the salt, oatmeal and rub the butter into the flour mixture until it looks like bread crumbs. Pour the juice mixture over the strawberries and apples. Sprinkle a thick layer of the oatmeal mixture on top of the strawberries and apples. Bake until lightly browned and bubbly. Top it with your favorite ice cream or whipping cream. ENJOY!!
