Sweet Potato & Rose Hip Soup

I know you are probably saying sweet potato & rose hip soup..... hmmm that sounds yummy. Well yes, it was a warm and delightful soup, yum yum. I am always drinking rose hip tea and i never throw away those little tea bags. I know you may be thinking yuck you keep your tea bags....I just can't see myself throwing away all that vitamin C. So yes, I keep my rose hip tea bags until i need them...like Friday evening :) to put into my sweet potato soup. I think it's great when you can find ways to bring in different flavor elements into your food. I also had some fresh ginger and leeks in the fridge that i needed to get rid of, so off they went into that creamy sweet potato soup. Bon Appetit!!!!

I used 4 peeled and chopped big sweet potatoes
1 leek, cleaned and chopped

1 tablespoon of peeled & grated fresh ginger

My favorite...1 tablespoon of rose hip....from my tea bags :)

6 cups of water or vegetable broth ( I used water)

In a saucepan, bring the water to a boil with the leeks, ginger, rose hip and sweet potatoes. Cover and simmer for 25 minutes until the potatoes are tender. Transfer the sweet potatoes to a blender. Strain the broth; add 1 cup to the blender and puree with the sweet potatoes. Reserve the rest of the broth for another use or to make more. Return the soup to the saucepan. Season with salt and simmer until heated through. Pour the soup into a bowl, top with dill or yogurt.

  2. Rose hip would have been a perfect addition to my super carrot soup but I couldn't think of where to find it. Adding it from tea bags is a great idea, will have to get the tea right away!
