I love avocado soup it’s so easy to prepare and very healthy. It’s made with one ripe avocado combine with yogurt and mint. Great for Summer!! Enjoy
1 garlic clove, minced
lots of chopped mint, handful
1 ripe avocado
2 cups of plain yogurt
salt & cayenne pepper to taste
Fresh lemon juice to taste
In a large bowl, mash pitted and skinned avocado together with garlic and mint. Put the mashed avocado in a blender with the yogurt and puree well.
Add cayenne and salt, adjust seasoning to taste and then add the lemon juice. You can refrigerate the soup or eat it room temperature.
