Mango Salsa

Something quick and easy for a Friday night dinner. Homemade mango salsa with seared salmon and feta cheese orzo. 

1 ripe mango, peeled and diced
1 shallot, diced
1 garlic clove, minced
1 jalapeno chile, diced
1 small cucumber, peeled, seeded and diced
Handful of cilantro leaves, chopped
2 lime juice
3tbs. of olive oil
1 tomato, diced and seeded
salt and pepper to taste

Combine all ingredients in a large bowl. Season to taste with salt and pepper. Refrigerate for 1 hour. Sear salmon and cook orzo. Add feta cheese and 1 tbs. of butter and olive oil to a hot pot and stir in the orzo. Top the salmon with the mango salsa.
