Apple Turnovers
Serving: 5 Apple Turnovers
Ingredients: Homemade Turnover Dough
1 1/4 cups all-purpose flour or pastry flour
8 Tbsp unsalted butter, very cold, cut into little cubes
1/2 teaspoon salt
4 to 8 Tbsp. ice water
Optional: If you want your dough to be sweet you can add 1 1/2 teaspoons of sugar
In a food processor or standing mixer combine the flour, salt, and sugar (if you are using sugar) pulse or stir the dry ingredients. Add the cut up butter and mix until mixture resembles a coarse meal but still able to see pea size pieces of butter. Add water 1 Tbsp. at a time, mixing until mixture begins to pull away from the sides of the bowl. Remove dough and place on clean surface with that extra flour. Shape into a disc and sprinkle the disc with a little flour on all sides. Wrap the dough in a plastic wrap and refrigerate as least 1 hour or the next day. Remove the dough from the refrigerator and let it sit until its easy to work with. Sprinkle a little flour to prevent it from not sticking. Roll the dough out into a rectangle shape about 1/2 inch thick. Now it’s time to fold the dough into thirds. Repeat this step 3 times, refrigerating in between to keep it cold.
Ingredients: Filling
2 Golden Delicious Apple, peeled, cored, diced into cubes
lemon juice, from 1 lemon
1 tablespoon butter
2/4 cup apple cider or apple juice
1/2 cup brown sugar or honey
1 3/4 teaspoon all-purpose flour
1/2 teaspoon cinnamon
1 3/4 teaspoon water
Cut the apples and add the lemon juice. Melt the butter in a large skillet over medium heat. Place the apples in the butter and add the apple cider. Cook and stir for 2 minutes. Add brown sugar or honey, and cinnamon and cook for another 2 minutes. Stir together flour and water. At this time I like to take the apples out the skillet. I try not to over cook my apples so I take them out before they get to soft. Once they are taken out leaving the juices I pour the flour mixture into the pan. Cook until sauce has thickened. Add the apples back to the mixture and remove from heat to cool slightly.
Preheat oven to 400 degree.
To assemble the turnovers:
In a small bowl, combine egg whites and water.
Take dough out of the refrigerator and let it come to room temperature. Flour the dough on each side and roll it into a rectangle shape and about 1/8 inch thick. Cut the dough into squares and fill the center of the dough with apple mixture. Using a brush, brush the egg wash around the edges of the squares. Fold each pastry in half, corner to corner, to form a triangle. Press together the washed edges of the turnover with a fork to seal the turnovers. Brush the tops of the turnovers with egg wash and sprinkle cinnamon sugar on top. Cut two or three steam vents in the top of the turnover. Bake for 25 minutes or until golden brown.
