Blueberry Cobbler

This is perfect for a Friday afternoon snack. I love blueberries and I definitely love biscuits. You can have them both for breakfast, dessert, lunch, and dinner. What I loved about this recipe is that the ingredients were very simple to follow. What was I thinking when I said blueberry cobbler, naw to much work. This was so super easy and delicious.




Ingredients: Blueberries
6 Cups Blueberries
1/2 Cup Honey
1 TBS. arrowroot
1 TBS. Lemon juice
1 TBS. Lemon zest
Pinch of Salt
Pinch of Cinnamon


Drop Biscuit: Ingredients
1 cup unbleached white flour
1/4 cup honey
2 TBS. oats
2 TSP. baking powder
1/4 TSP. baking soda
1/4 TSP. salt
1/3 Cup Plain Yogurt
4 TBS. Melted Butter
1/2 TSP. vanilla


Preheat a 375 degree oven. Whisk 1/2 cup of honey and arrowroot in a large bowl. Stir in blueberries, lemon zest, salt, cinnamon and lemon juice. Pour the blueberry mixture in a ungreased casserole dish. Bake the blueberries for about 25 minutes, until mixture thickens and boils. In the meantime, mix the flour, oats, baking powder, baking soda, and salt in a large bowl. In a second bowl mix the honey, yogurt, vanilla and melted butter. Set aside. Once the blueberry mixture is done remove from oven and set aside. Now, it’s time to mix the liquid ingredients with the flour mixture. Once you are finished mixing the flour mixture. It’s time to drop the dough onto the hot blueberry mixture. Increase the oven temperature to 425 degrees. Bake uncovered 15 to 18 minutes or until topping is golden brown. Serve warm.
