Stuffed Spinach & Gouda Cheese Jumbo Shells

Stuffed Shells



Ingredients:
1 box Jumbo Shells
Spinach, fresh or frozen
2 tablespoon olive oil
1 cup Sour Cream
1 tablespoon of flour 
1 Small Onion,diced
1 Garlic Clove, minced
1 cup shredded Gouda Cheese
1 teaspoon salt
pinch nutmeg
pinch cayenne pepper
pinch ground black pepper
Homemade tomato sauce or 1 Jar Barilla Tomato & Basil Sauce

Preheat oven to 350 degrees. Cook jumbo shells according to the package directions. Add oil, onion, garlic and cook until onions are translucent. Add the salt, pepper, cayenne, and nutmeg. Stir and add the sour cream. Add the 1 tablespoon of flour to maybe 2 tablespoon of water and whisk together. Stir it into the sauce and mix well. Stir in Spinach and reduce heat, continue cooking until spinach has cooked down. Taste and if you need to add more seasoning this is the time to do so. Pour at least 1 cup of tomato sauce into a 13x9 inch baking dish. Fill the jumbo shells with spinach mixture and shredded cheese; place in dish. Pour remaining sauce over shells; sprinkle rest of the cheese over the top and cover with foil. Bake for 30 minutes or until its heated through.
