Chocolate Fudge Cookies
A chocolate lover’s delight, yummm. These cookies were super fudgy with a slight cracked shiny surface that revealed white chocolate chips melted into its soft texture. Once you eat one you have to eat another.
Serving: 24 to 30 cookies
8 oz bittersweet or semi sweet chocolate squares
1/4 cup melted butter, unsalted
1/4 tsp. salt
2/3 cup sugar
1/3 cup brown sugar
1 cup chopped pecans
1/2 cup cake flour
1/2 tsp. baking powder
1/3 cup plain yogurt
1 tbsp. coco powder
1 cup white chocolate chips
Preheat oven to 350 degrees.
Chop the pecans and place them on a baking sheet with parchment paper and toast in the oven until pecans become aromatic (about 8-10 mins). Whisk the flour, baking powder, salt, and coco powder in a small bowl and set aside. Melt the butter and chocolate in a sauce pan over very low heat, stirring until smooth. Once chocolate mixture is smooth remove from heat and set aside.
In a bowl or standing mixer, beat the brown sugar, granulated sugar and the eggs for about 5 mins. Add the yogurt and beat for another 5mins. Beat in the melted chocolate mixture and the vanilla. Beat until everything is incorporated. Fold in the dry ingredients into the chocolate batter and add the pecans and white chocolate chips. Fold until everything has been incorporated. Cover the top of the batter with plastic wrap and place in the refrigerator for about 30 minutes.
I used a small ice cream scoop, but you can use a tablespoon and scoop up some batter and drop it onto a baking sheet lined with parchment paper. Bake cookies 8 to 10 minutes or until the top of the cookies began to slightly crack open. Do not over bake these cookies.
