Louisiana Smoothed Cabbage & Sausage
1 large head cabbage, chopped
1 tablespoon olive oil
1 1/2 cup water
1 onion, diced
1 bell pepper, diced
2 garlic cloves, minced
1 jalapeno pepper, chopped ( don't want it spicy take out the seeds)
Smoked Sausage ( Ham would work also)
Creole Spice (Tony Chachere)
In an dutch oven or heavy saucepan sauté the diced onion, peppers, and garlic in olive oil until tender. Add the cabbage, sausage, seasoning and water; reduce heat & cover until cabbage is tender and wilted down. If you need to add more water during the cooking process please do. Don't forget to taste food and if you need to add a little more seasoning do so. May be served over rice.
