Whole Wheat Quesadillas
Mexican food made right at home…don’t you love it?!! I made these quesadillas Friday afternoon and they were filled with refried beans,veggies, ground turkey, jalapeno peppers and cheese. No more wondering what to eat for lunch!!!
Ingredients: You can do Veggie or Turkey
2 Whole Wheat Tortillas (recipe link)
Any Grated cheese ( i used gouda)
Any Veggies (I used red onions, red pepper, green pepper, yellow pepper)
Refried beans
Jalapeno Pepper
Spicy salsa
Cooked Ground Turkey Meat
Mexican seasoning to taste
On medium high, heat a large cast iron frying pan. Add small amount of olive oil and butter and saute the veggies until tender. Turn off heat and set aside once done.
Spread one side of the tortilla with refried beans. Then spread some spicy salsa on top of the refried beans. Add the veggies or cooked turkey meat season with mexican seasoning. Add the jalapeno peppers and sprinkle the cheese on top and place the other tortilla on top of the cheese . On medium high, heat a large cast iron frying pan. Add olive oil and butter and spread it around the bottom of the frying pan. Place the quesadilla in the pan and brown on both sides. Transfer to a plate and let it rest for about 5 minutes. Cut each quesadilla into 4 triangles and serve.
Make Fridays A Little More Special Than Normal!!
I make similar quesadillas very often on a weekday night. They are so simple and so delicious! I usually put beans in mine. I have yet to master homemade tortillas, so I definitely need to check out your recipe for those. Yum!
