Asparagus & Green Lentil Pilaf

Something easy, delicious, fresh, and healthy to cook on those Friday evenings.  

Ingredients:
1 cup of lentils
1 1/2 cups of vegetable broth
1 bundle of medium size Asparagus
2 shallots
1 tablespoon of butter
1 tablespoon of olive oil
1 tablespoon of red curry powder
1 cup of  Cooked Jasmine Rice
Salt & Pepper to taste

First Step: Blanching the Asparagus
Use a small, very sharp knife or vegetable peeler to remove the outer skin of the lower part of the asparagus. Cut the woody ends off and wash the peeled asparagus in cold water. Cut the asparagus into 1 or 2 inch pieces.  Gather a large bowl of ice water and place on the side. Boil a large pot of water. After the water has reached boiling point, place the cut asparagus into the boiling water. Cook until asparagus turns a bright green or 3 minutes. Remove asparagus from the pot and place in the bowl of ice water to stop the cooking process.  Remove asparagus out of ice water and place on the side. 

Second Step: Cooking Lentils
Pour 1 1/2 cup of vegetable broth into a pot and boil it in medium or high heat. Add the cup of lentil when the water boils. Do not add salt because it will harden the lentils. Boil the lentil for 3-5 minutes then cover and reduce to a simmer for 10-15 minutes. Just follow the instructions on the lentil bag. 

Third Step: Putting Everything Together
In a large pot over medium high heat pour the olive oil, butter, shallots and curry powder. Stir constantly for 1 to 2 minutes. Add the asparagus, lentils and cooked rice. Stir until everything is combined. Adjust seasoning at this time. Serve

  2. This is a must try. I adore asparagus. I could make a meal from this dish. Great picture!
