Peppermint Tea Ice Cream

We all know how flavorful peppermint tea can be and how ice cream can some how stimulate our five senses of Summer. So when you put these two things together you get this refreshing light but sweet creamy smooth enjoyable ice-cream.  So here it goes....

In Louisiana, it's hot, humid and hot (did i mention it's hot). Yes i did, and what i need is some cold creamy flavorful ice cream to cool me off. Ice cream can come in so many flavors that it's hard to decide which one you really want. So, I came up with this brilliant idea to combine some peppermint tea that i had in my cabinet, some honey, and cream. Sounds good, right?!! I found this amazing ice cream recipe stonesoup from foodgawker. The only thing i did different with this recipe is adding peppermint tea bags to the cream. The texture was perfect better yet awesome.  No ice cream maker for me, I'm sticking with the easy stuff. By the way, did i tell you guys how good this ice cream came out. OMG.... it's refreshing, creamy, and had a light peppermint flavor. Sooooooo good and i didn't need a ice cream machine. 

Ingredients:
1 1/4 cup heavy cream
1/ 1/4 cup cream
1/2 cup honey (you can substitute the honey with sugar)
2 peppermint tea bags

Over low heat, warm the honey until it's smooth and runny. Add the warm cream to the honey and stir until mixture is smooth. Raise the heat to medium heat not boiling point just enough to see little bubbles. Place tea bags in mixture and cover. Reduce heat to simmer and steep for 20 minutes. Squeeze tea bags into mixture to get all those remaining juices out of those little bags. Discard tea bags.

Whisk the heavy cream until is starts to form soft peaks. Fold the whipped cream through the peppermint mixture and place in a freezer proof container. Freeze for at least 4 hrs. or when ever you're ready to eat it. Time to eat Ice Cream!!!!!
