Blueberry Flaxseed Waffles with Blueberry & Raspberry Syrup
These healthy hearty but light waffles are made with flaxseed meal and filled with blueberries. They are quite delicious and the blueberry and raspberry syrup adds the right amount of sweetness. I usually make these waffles when we start our Phase 1 Diet and you can check that out on know the cause if you are interested. However, these waffle are always calling my name no matter what diet I’m on or what time of the day it is. If you are like me I love making homemade waffles. I enjoy pouring the batter, spreading it evenly, closing the waffle maker and enjoying the aroma it sends through the house. I can’t resist these waffles and especially the berry topping, yum! It is definitely a Delight and something you must try!!!
Makes 4 waffles
Ingredients:
12 tablespoons of Flaxseed Meal
4 Eggs
4 tablespoon Melted Butter
4 tablespoon Olive Oil
2 tsp. Baking Powder ( i used cream a tartar and baking soda)
1/2 cup of fresh or frozen, thawed blueberries
Measurements for Baking Powder:
Baking powder (1 teaspoon) = 1/4 teaspoon baking soda + 1/2 teaspoon cream of tartar
Melt the butter in the microwave or saucepan. Mix the Flaxseed meal and baking powder. Add the Eggs, room temperature melted butter and olive oil. Mix all the ingredients until its well combined. Let it sit for 10 minutes to thicken. Add the blueberries and mix well. Pour the batter into the waffle maker and follow your waffle maker directions. Serve Hot
