Simple Yogurt Waffles topped with Peach Lavender Jam
Ingredients:
Makes 6
1 1/2 cup Whole Wheat Pastry Flour
1/2 cup unbleached Flour
1 tsp. baking powder
1/2 tsp. salt
4 tbs. melted butter
2 eggs, separated
2 tbs. honey
1 cup of Plan Yogurt
1 cup of Milk ( I used almond milk)
Combine all dry ingredients flour, baking powder, and salt. Separate yolks from egg whites and beat egg yolks in another bowl. Whip egg whites until they reach soft peaks. Mix the melted butter, honey, yogurt, and milk with the egg yolks until smooth. Make a well in the center of the flour mixture and pour in the liquid mixture. Combine all the ingredients until well incorporated. Fold in the whipped egg whites. Pour batter into waffle maker and cook until done.
