Serving Autumn

Serving Autumn2

Fall is here and the leaves are changing colors, jackets are beginning to be pulled from the closets, football has started, children are getting ready for Halloween candy and everyone is thinking about their Thanksgiving feast. To celebrate this wonderful season, I decided to plan a romantic autumn dinner for two.  My goal was to come up with a luxury menu for the cooler weather by adding a little southern twist to it.  I decorated the table with things that I had purchased from an auction. It’s amazing what you can find at those local auctions.  The menu consists of many fall’s comfort foods that are grown to warm the body and soul.  This menu starts with a delicious soup to a fall salad and ending with a fulfilling main course served with an apple-pear cider.  Oh, and Let me not forget, Dessert!

The menu for Serving Autumn:

Soup
Spicy Sweet Potato Soup
2 sweet potatoes, chopped
1 carrot, chopped
1 jalapeno pepper
2 tablespoon of butter
2 cup homemade vegetable broth
Roasted Pumpkin Seeds on Top
Salt/Pepper to taste

Salad
Spinach
Roasted Pecans
Raspberries, fresh
Feta
Salad Dressing
Orange juice, balsamic vinegar, olive oil, salt & black pepper

Main Course
Baked Salmon in a Cranberry Raspberry Sauce…could not find any cranberries
Rosemary Quinoa

Vegetables
Roasted Brussels Sprouts & Potatoes with a Parmesan Crust
Honey Glazed Carrots

Dessert
Warm Apple Pie…This pie was delicious

Beverage
Sparkling Apple-Pear Cider

The amazing thing about this menu is that it was so easy to put together even my hubby helped!!
