Sunday’s Breakfast…Baked Eggs

Baked Eggs

Cooked in a quick and spicy tomato sauce these eggs are simple and delicious!! You can easily overcook the eggs so as soon as the white part starts to firm up they are done. I like my yolk to be a little runny, but my husband like his to be firm. So, I leave his in a little longer. Chop some scallions or add some basil at the end and serve with bread. I like to pour some good olive oil on top and add a pinch of cayenne pepper to spice things up…Yum those eggs look good!!!!

2 tablespoon of olive oil
1 tablespoon of butter
4 cloves of garlic, chopped ( I love garlic so you can reduce it to two)
1 15oz can tomato sauce
1 Jalapeno Pepper, chopped & keep seeds
1 small onion, chopped
1/4 cup of water
Sun Dried Tomatoes (the amount depends on you)
5 eggs
3 tablespoon of honey
A dash of Italian seasoning (don’t know how many dashes i did so it’s on you!)
Pinch of Cinnamon
Pinch of Nutmeg
Salt & Black pepper to taste
Cherry Tomatoes, cut in half (optional)

Preheat oven to 400 degrees
Heat olive oil &butter in pan. Add onions and cook until translucent – about 6 minutes. I like to caramelize my onions it adds a little savoriness to the dish. Add garlic and jalapeno peppers. Cook until garlic becomes aromatic.  Pour tomato sauce  to the onions, garlic, and peppers. Add sun dried tomatoes, cherry tomatoes, honey, cinnamon, nutmeg, italian seasoning, water and salt and black pepper. Turn heat to low and allow to cook  for about 20 minutes.
Spread tomato mixture in the bottom of a baking pan or, do like I did. I used my black skillet i cooked the mixture in and just popped it in the oven. Crack eggs on top of tomato mixture. Place in oven and cook for 15minutes or longer for a firmer yolk about 25minutes.
