Zucchini Topped with Cashew Basil Pesto

I try to incorporate more raw food dishes into my family diet when ever I can get a chance to. So this weekend I had this perfect dish to create. Zucchini pasta with a cashew basil pesto!! I used my Vita-Mix to blend everything together and used a potato peeler to make the zucchini pasta. So simple to make and such a delicious taste.

Ingredients:
1 cup Basil
2 Garlic Cloves
1/2 cup Cashews
2 Zucchini
1/2 cup Olive Oil ( Zoe Olive Oil)
Salt & Black Pepper to taste
Parmesan Cheese (optional) I did not use cheese

For the Pesto: Makes 1 cup
Place the basil, cashews, garlic, olive oil, salt & pepper into a blender or food processor. Blend until smooth but still having a little texture to it. Place remaining pesto in a glass jar and refrigerate or store in the freezer.

For the Zucchini Pasta
Wash the Zucchini under cold water and dry with a paper towel. Use a potato peeler to slice lengthways into long noodles. Place zucchini noodles into a bowl and add the pesto sauce and mix.
