Almond Crusted Mahi Mahi
A very easy and creative way to eat Mahi Mahi fillets.
Ingredients: 2-3oz of Mahi Mahi fillets
1/4 cup, chopped Almonds
1/4 cup Panko
1 tsp. tarragon
2 tbsp. soft butter
Pinch of salt
Mix all the ingredients together. Rinse the Mahi Mahi fillets under cold running water and dry them off with paper towels. Season the fillets with salt and black pepper, not a lot of salt just a sprinkle. Coat Mahi fillet with the almond mixture on both sides. You can pan fry these or place them in the oven.
For Pan Fry:
Heat 2 tablespoon of canola oil in a medium hot pan. Add fish and fry for about 3 to 4 minutes on each side until golden brown.
Or-
For Oven:
Preheat oven to 400 degrees. Place fish in a baking dish and cook for about 10 to 13 minutes on both sides until golden brown. Or you can run it under the broiler for a couple of seconds to toast the top.

This Mahi Mahi looks amazing!! I've done something similar, but with macadamia nuts... I pan-fried mine, but I think I will try to back them next time.
