Lentil Chili

Lentil chili Ingredients:

2 1/4 cup of brown lentils
6 cups vegetable broth
2 cups water
1 medium yellow onion
1 red bell pepper, chopped
5 cloves of garlic, chopped
1 -28 oz can whole tomatoes ( I crushed them with my Hands)
2 medium carrots, chopped
2/3 cup of tomato sauce
1 jalapeño pepper, chopped
1/4 chopped parsley
1 teaspoon turmeric
1 1/2 tablespoon cumin
1 1/2 tablespoon coriander
4 tablespoon chili powder
Pinch of cayenne pepper
Salt to taste

Saute onions in 1 tablespoon of olive oil until translucent. Add the chopped garlic and sauté the garlic for about 1 minute. Add the red bell pepper, and jalapeno pepper and cook until all peppers are tender. Add the carrots and sauté for a minute or two. Add the spices turmeric, cumin, coriander, chili powder and cayenne pepper and cook for 1 minute, stirring constantly. Add lentils, tomatoes, broth, water and tomato sauce. Bring to a boil, reduce heat to medium low and simmer, partially covered, cook until lentils are soft about 30 minutes. Uncover and season with salt and add the chopped parsley.
