Spicy Tomato Basil Bisque

Ending the summer right with a bowl of creamy tomato and basil bisque containing butter, onions, coconut flour and a hint of spice. 


1 28oz can Crushed Tomatoes
2 1/2 tbsp. butter
1/2 onion, finely chopped
2 1/2 tbsp. coconut flour
1 1/2 tsp. dill
1/2 tsp. Italian seasoning
3 cups vegetable stock
2 1/2 tsp. honey, ( you can add more or less honey as your desire)
1/4 + 2 tbsp. almond milk
1 jalapeño pepper, chopped
salt and black pepper to taste
pinch cayenne pepper
15 leaves of fresh basil

Melt butter in a pan. Sauté the onions in the butter until they are translucent. Add the chopped jalapeño peppers and sauté until soft. Add the coconut flour and stir, about 5 minutes. Add the crushed tomatoes, dill, cayenne pepper, italian seasoning and stock. Bring to a boil, cover and simmer for 10 to 15 mins. Add the honey, almond milk and return to a boil. Reduce heat and taste, add salt, pepper, and chopped basil. Simmer for 15 minutes.
