Slow Roasted Tomatoes, Olives, Basil & Feta
Slow roasting tomatoes are one of the best ways to intensify their richness and sweetness. The technique is very simple. First, start with choosing juicy-ripe tomatoes. Cut the tomato in half, spread them onto a baking sheet, sprinkle with salt, black pepper and herbs and coat them generously with olive oil. Roast the tomatoes slowly in a 225 degree oven, it takes about 2-3 hours for them to cook. The tomatoes should reduce in size, and look shriveled and dry, but still a little moist.
Ingredients:
Slow Roasted Tomatoes
Kalamata Olives
Green Olives
Feta Cheese
Basil
Salt/Black Pepper to taste
Olive oil
Place everything in a bowl, drizzle olive oil and enjoy.
