Spaghetti with Kale
Ingredients:
1 1/2 bunch of Kale, stems removed and chopped
4 cloves of garlic, sliced
1 shallot, diced
4 tablespoons olive oil
12 oz spaghetti noodles
Heat oil in a large skillet over medium heat. Saute garlic until fragrant add shallots and saute until translucent. Add kale and stir until slightly wilted. Season with salt and cracked black pepper. I like to add a pinch of cayenne pepper for a little kick.
Cook pasta in well salted water and follow package directions. Once done, reserve 1/3 cup of pasta water and drain the remaining. Add reserved water to the kale mixture and add pasta. Cook on high until everything is well combined.
