Meatless Mondays or Better Yet Meatless Fridays

Tempeh Meatballs in a Homemade Spaghetti Sauce

tempeh meatballs

Found this great recipe from VeganDad. I changed the recipe a little. Hey, I gotta give it a little Friday Delights southern flair. The flavor was delicious and the texture was just right!!
Ingredients:
2 packs of Tempeh, defrost in warm water
1/2 cup oatmeal
1/2 cup Whole Wheat Flour
1 onion, chopped in chunks
6 cloves of garlic
1/4 cup Olive Oil
1/2 tsp. black pepper
2 tsp. rosemary
1 tsp. cayenne pepper
2 tsp. sage
2 tsp. thyme
2 tsp. oregano
4 tbs. soy sauce (Kikkoman Soy Sauce)
4 tbsp. of homemade sauce (like a BBQ sauce)

Preheat oven to 350 degrees.
Cut the tempeh up and place in a food processor with the other ingredients.
Process until the tempeh is broken up and everything comes together.
Place in a bowl and take one tablespoon of the tempeh mixture and roll them into little balls. Place in an oven proof pan...i like to use my black skillet...and bake until brown or leave in the oven for 20 minutes.

Place in spaghetti sauce
