Whole Wheat Crepes

crepe3

Whenever I get a chance to cook breakfast for my family, I usually make crepes. It’s yummy to the tummy and a fun way to spark food creativity!  As most people know, crepes are a very thin pancake and usually sweeter and can be rolled, folded into a mouthwatering treat. Pouring a thin liquid of batter onto a nonstick hot pan and spreading the batter evenly over the surface of the pan is how you make crepes. They can be eaten plain or stuffed with any variety of fillings. This morning I decided to fill my crepes with strawberries and chocolate drizzle, Yum!

Ingredients: 8 servings

1 cup whole wheat flour
2 tablespoon honey
3 large eggs
1 1/3 cup Almond milk
3 tablespoon melted unsalted butter
1/2 teaspoon salt

Blend all ingredients in a blender until smooth. Refrigerate for 1 hour, covered. Heat a nonstick pan over medium heat. I used my 8-inch black skillet. Coat the pan with  canola oil. Transfer about 1/4 cup of the batter onto the pan and spool it around or spread it out using a spatula or spoon. Cook 2 to 3 minutes until the crepe begins to brown around the edges. Flip and cook for an additional 2 minutes until crepe is no longer wet in the center. Here is a great video on how to make crepes: http://www.youtube.com/watch?v=C1DgmbMMOgA

  1. We love crepes too. We LOVE crepes. I love whole wheat (and trying to get my kids on board) I've found that it's easier with breakfast batters than with bread. My son's favorite paring with crepes is white syrup...

  8. The word crêpe is coming from the Latin crispa, which means “curled”, and refers to a type of really thin pancake. Crêpes are usually cooked with wheat flour. It is completely flat and usually have a filling or spread. In addition, crêpes are entirely unleavened, while standard pancakes do have a leavener of some kind. Although, in terms of origin, one could argue that they are just the French way of reproducing the German pancake
